Ice cream is a delicacy so loved all over the world, but few know that its history has very ancient and fascinating roots. Today I want to share with you a little bit of the enchanting story of the origin of ice cream!

The origin

The origin of ice cream can be traced back even centuries, to ancient China. About 2,000 years ago, the Chinese mixed ice with rice milk, creating a kind of cold, creamy dessert. This “pre-ice cream” was served to the nobles of the imperial court to refresh their hot summer days.

Later, in the Middle East, a technique was developed to cool drinks using a mixture of ice and salt. This method made it possible to reach even lower temperatures, making it possible to produce an ice cream more similar to the one we know today.

However, ice cream as we know it now has Italian roots. During the Renaissance, parties and banquets were organized in northern Italy where “sorbetto”, a mixture of ice, fruit and sugar, was served. Sorbet became so popular that it soon spread throughout Italy.

The real revolution in the history of ice cream occurred during the 16th century, when the famous Italian merchant Francesco Procopio dei Coltelli opened the first real “caffè gelato” in Paris. Procopio perfected the ice cream preparation technique, making it creamier and adding new flavors through the use of ingredients such as cocoa, vanilla and fruit.

From then on, ice cream became a delicacy spread throughout Europe, and over the following centuries, it also reached the New World with the arrival of Italian emigrants in the United States. Today, ice cream is an international delicacy, with a wide range of flavors and varieties.

So every time we enjoy a delicious ice cream, we are participating in a long culinary tradition that spans centuries of history and culture. It’s a joy to share with friends and family, a sweet moment of pure pleasure that unites us through the ages.
